I did it in original apocalypse world. The best recommendation I can make is treat it the undead as an environmental hazard to be navigated, not an enemy the PCs fight.
I did. We started with zombies as distant menace, but we had to build some custom moves when players encounter zombies in close fight.

In our World the zombie virus has infected everyone, when you die you turn no matter how you die. Zombies are ultra infectious because they are walking rotten flesh, so a wound made by a zombie in bound to infect dirty and quick.
When you suffer harm from zombies , use this move instead of the usual: Roll + harm suffered
On a 10+ MC can choose one :
– Your are surrounded by zombies, terrified with no means to escape right now.
– You suffered an open wound and someone need to cut of the limb very quickly. If it’s not possible you should consider that life is unbearable as if you reached 12 on your damage clock.
– choose 2 options from the 7-9 list below
On a 7-9 MC can choose one :
– You lose your footing.
– You lose your grip on whatever you’re holding.
– You lose track of someone or something you’re attending to.
– You miss noticing something important.
Not much of a change, but I believe that custom move are in order to accommodate your setting.
