I am new to uncharted worlds and was wondering if i understood this correctly. Once stats are selected at character creation , they are pretty much set in stone and can’t be increased through experience?

They cannot, but a) you can always offer alternate ways to up the stat as part of your setting, and b) stat increases tend to be boring advances, IMO
This is correct.
Note that the background does provide a way to give an additional +1 to a stat. I always make sure to point this out to players when they’re considering their skill choices.
Also note that Get Involved does help mitigate the absence of stat raises. Because other characters can attempt to help with their own narrative strengths, and the result is a full bump of level rather than just a +1, you don’t really NEED to the stat boosts that other games have.
Can’t be increased by experience, but there’s always room for custom moves representing alien brain surgery, super-soldier machines, bravery-enhancing drug cocktails, etc. to be encountered during play.
I wish other games did the same.
+1 to some stat is the least interesting of all possible advances.
